
For Starters, a butternut soup that is equally delicious as its original version.
Braise a chopped onion in a little chicken stock until soft. Add a large Butternut - peeled and cut into chunks, and the rest of the prepared stock.
Once the Butternut is cooked, add a tin of drained Butter Beans and a cup of fat free milk.
Simmer and season to taste. Puree the soup when it is slightly cooled.
This is also a Low GI dish, so eat as much of it as you can!!!!
